Pancake Day is one of our favourite days of the year, and not just because we love pancakes. It’s a great way to use up ingredients that are past their best. Nobody notices a soggy strawberry when its sandwiched between chocolate spread!
Here’s a recipe to help you to make the most of brown bananas – the moist and fluffy pancakes will go down a treat.
Makes 2 servings
Ingredients:
• 60g self-raising flour
• 1 medium/large brown banana
• 1 large egg
• 3 tbsp of milk of your choice
• 1 tbsp melted butter
• 1/2 tsp vanilla
Method:
1. Mash your banana and add your milk, egg, butter and vanilla. Mix until smooth.
2. Add your dry ingredients, stir until combined.
3. On a medium heat, add some oil and cook pancakes until the top side bubbles.
4. Flip and cook – they’re done when they’re golden and cooked through.
